I’m wondering if it’s possible to somehow add a description to a colour? For example black is for 3mm MDF cut, green is for 1.8mm, yet another for acrylic.
It would be even greater if a pop up would appear with description when hovering over colors.

You can already add a description to the colors. After you assign a color to a layer, double click on the color in the Cuts panel. You can change the “Name” field to whatever you want. It will then display that name when you hover over the colors palette at the bottom of the screen.
You can do this as @sutick identifies. You might also want to look at the Materials Library features as you move forward with your workflow.
