Is there any way to adjust the Power and Speed as the laser is running? This would be super helpful to dial things in.
Not at this time with GCode hardware.

GRBL supports overriding speed and power as a percentage of whatever values you started with, so you can go to 250% (I think) or down to 10%. So, yes, it’s possible, but we’d need to do a bunch of work to support it.
