I use a k40 with a mini GRBL board, I tend to use mm/min.
Would there be any performance difference in using this as opposed to mm/sec with a k40.
None at all - it’s just minutes vs seconds. 1mm/s == 60mm/min. GRBL uses mm/min and LightBurn always converting to that before sending it to the controller, regardless of what you have set in LightBurn

I just thought I remembered reading somewhere that one actually sent more data than the other thus causing a performance decrease.
You likely read that on Facebook. Lots of things you read there are completely made up, and that would be one of them.
