Save layers / cut as for another project.
If I go to another project now, I have to reset all settings that also correspond to the previous project.
The layer settings are saved with a project file. When you open an existing project, whatever the settings were used on that project load. If you Import the project, only the artwork is loaded and layer settings are not changed. The best way to handle layer settings is to create a material library, rather than setting up layers to save settings. Docs and a video below.

If you expect specific palette colors to have specific settings, rather than using the Material Library, you can set the defaults for each color:

The answer I would give boils down to the two suggestions given earlier.
One option or the other should solve your problem.
