I would consider going beyond the laser to spice them up. Add stain to tye lowest layer to give the appearance of a Ginger bread cookie. Consider adding white paint to the outlines to give the appearance of frosting. Some small touches of color like red or pink for the bow and silver for tye snowfkaje would really make it “Pop”. The ither thing that I like to do, is cut a thin piece of veneer and inset it in for tye letters. Use a contrasting color to the wood background.

Just adding a mention of a method I’ve used on similar things (including bamboo, which I really like, grass or not): If you’ve never tried tossing a bit of torch flame at a project, it can give some really neat results.
For a multi-level project like that, sometimes I’ll strategically torch the bottom layer to add color where I want it, then buff it with some brown paper or even a rag, then add the non-roasted top piece. It gives a different feel to me than just going laser.
