I created shape and transform it in path for text.
once this step done, how can I delete only the shape and keep the text in curve ?
For now, after you have assigned a path to text, convert the text to shape. That will allow you to delete the path used to shape the text.
There is another workflow you might consider. Place the path you plan to use to shape your text on a different layer than the text and set that layer to not output. This way you can still edit the text as text, edit the path shape you are using for the text and define the desired output.
