Editing nodes of an offset shape

I create some text and convert to a path and I can edit the nodes without a problem.

However, I want to thicken the letters slightly so I create a 0.5mm offset, click to select the resulting object and delete the original object but I cannot then use the node editor as it does not show any nodes within the new object.

Is this a bug or something I am not undertsanding?
