Infill Individual Font Letters with patterns/hashh/circles etc

Hi everyone, my question (aim) is to be able to infill letters from a font with different patterns (hash lines, circles, swirls), each letter differently. I guess each letter must be created as a stand alone, but how do yo infill each of these shapes as nothing comes up under shape properties.
Thanks for any help or ideas on this one.

You have to turn text into shapes, then you can do whatever you want with it.

Sorry, being a complete numpty here, how do you convert a letter (text) to a shape?
