The dialog box that controls the distance moved when pressing the on-screen arrow keys is set to 10mm/s and is greyed out. Therefore I cannot change it. Does anyone know what is causing this and how I can make it so I can alter it?

If you have continuous jog enabled then distance value is irrelevant and will gray out. Disable continuous jog if you want to be able to set distance.
If that’s not it can you take a full screenshot of LightBurn?
Yes, I do have continuous jog enabled. I just assumed that that would only come into effect when holding down the button. I assumed, obviously wrongly 
that a single short push of the button could be controllable…
