If I start engraving and set the speed to 2000 and max power of 75%
It takes 1 hour and 25 minutes to follow the preview screen.
And at 4000 and 80% 45 minutes.
But in practice it takes 2 hours for both
I use a diode laser and have the setting on mm/min.
Are there other things I should pay attention to?

All of these machines have an ‘internal’ speed limit. You can request anything but these limits will be applied.
These are set in the $ variables in grbl controllers. Specifically $110 through $112 for each axes. Screenshot is NOT from lightburn.
You can read these from your controller via ‘Edit → Machine Settings’ and ‘save’ them to a file in case you need to replace your controller or you modify something and break the configuration.
Power has nothing to do with how fast the machine will complete the job.
The ‘preview’ is configured by going to ‘Edit → Device Settings → Additional Settings’ I thought this was read from your controller by Lightburn to get the best ‘estimate’ of the job run time.
