How can I add or change a save file format? I would like to add a default .ngc format.

They’re built in to the software. All GCode is saved as text, and the formats are the same - it’s only the file extension that changes. Are you trying to modify the file content itself, or just the file extension?
Just the file extension.
I can make that change for the next release.
