I have an Atomstack S20 Pro. How many passes do I need to cut the 3mm MDF?

Why on earth do you think you need more than one pass? And I suspect you can accomplish that at something like 80% power.
Why not just do some test runs to see what is needed? Easy enough to set up, and plenty of resources to lead you by the hand through the process.

I ask why it doesn’t cut with 1 pass, I use 11, I think it’s a laser or software problem but I don’t know how to fix it.
Probably, it is a problem with your settings. The most likely is a difference between the $30 setting and the machine setting within LB.
Best approach is to go back and start from the beginning, following the tutorial available at LB: LightBurn Software Documentation. If this does not work, there are many here who can help diagnose and solve other problems.
