Mac computer, Grbl1.1e,universalengraver 3000mw.
What problems would I encounter using GRBL 1.1e with the above engraver?

It will work - the power control isn’t as good as in 1.1f or higher (laser mode doesn’t work quite correctly) but if you are doing image engraving, vector fills, or cutting you won’t likely notice.
