How can I carve letters and words, I can’t find a way, even if it’s in a straight line without the ups and downs that v-bits do.

I carve using a profile operation at present in MM, set cut to along line, finding the right text is the key at present , i use a very narrow text to get best results
as you can see bottom 3 fonts
are not clean done with a 60deg at 3 and 4 mm
top 2 are same narrow lettering , top is 90 deg at 3.5 mm
2nd line 60 deg at 4 mm deep
remember to H space lettering if you want gap between letters

I would use a Profile operation and a cutter with the tip geometry you’re looking for: Profile - MillMage Documentation

We also support single-line fonts (SHX fonts, which you can find on the forum, and TTF single line fonts available here: https://www.singlelinefonts.com/)
Those would work with a narrow end, ball, or V mill, as a profile on the line.
